Spinach Aviyal Recipe | Kerala Style Aviyal



✨ Kerala’s Aviyal is a wholesome, mildly spiced coconut curry traditionally made with a mix of vegetables. This Spinach Aviyal variation is quick, healthy, and flavorful – perfect for a nutritious lunch or festive Kerala meal.


🥘 Ingredients

  • Spinach (Palak) – 2 cups (washed and chopped)

  • Carrot – 1 medium (sliced)

  • Beans – 10–12 pieces (cut into 2-inch pieces)

  • Drumstick – 1 (optional, cut into 2-inch pieces)

  • Raw Banana – 1 (optional, diced)

  • Grated Coconut – ½ cup

  • Green Chilies – 2–3

  • Cumin Seeds – ½ tsp

  • Turmeric Powder – ½ tsp

  • Yogurt / Curd – ¼ cup (optional, for tanginess)

  • Coconut Oil – 2 tsp

  • Curry Leaves – 2 sprigs

  • Salt – as required


🍳 Preparation Method

  1. Cook the Vegetables

    • In a pan, add carrot, beans, raw banana, and drumstick (if using) with a little water and turmeric.

    • Cook until tender but firm.

  2. Grind Coconut Paste

    • Grind grated coconut, green chilies, and cumin seeds into a coarse paste.

  3. Combine with Vegetables

    • Add spinach to the cooked vegetables and pour in the coconut paste.

    • Stir gently and cook for 2–3 minutes.

  4. Add Yogurt (Optional)

    • Reduce flame, whisk yogurt, and add slowly to the curry to avoid splitting.

    • Mix gently until well combined.

  5. Final Touch

    • Drizzle coconut oil and add curry leaves before switching off the flame.


🌿 Serving Suggestion

Serve Spinach Aviyal with steamed rice, Kerala sambar, or parippu curry for a traditional Kerala meal.
