Thenga Pathiri | Sweet Coconut Pathiri



✨ If you love Malabar snacks, you’ll adore Thenga Pathiri – soft rice pancakes stuffed with sweet coconut and jaggery, then steamed until fluffy. A festive treat that melts in your mouth!


🥘 Ingredients

For Pathiri (Pancakes)

  • Rice flour – 2 cups

  • Water – 2 cups

  • Coconut oil – 1 tsp

  • Salt – a pinch

For Sweet Filling

  • Grated coconut – 1 cup

  • Jaggery – ½ cup (melted and strained)

  • Cardamom powder – ½ tsp

  • Ghee – 1 tsp


🍳 Preparation Method

Step 1 – Make Filling

  1. In a pan, heat jaggery syrup until slightly thick.

  2. Add grated coconut, cardamom powder, and ghee.

  3. Mix well and cook until sticky. Let it cool.

Step 2 – Prepare Pathiri Dough

  1. Boil water with salt and coconut oil.

  2. Gradually add rice flour and mix into a smooth, soft dough.

  3. Cover and rest for 5–10 minutes.

Step 3 – Shape Pathiris

  1. Roll the dough into thin circles.

  2. Place sweet coconut-jaggery filling on one circle, cover with another, and seal edges.

    • Or fold into semi-circles for a simpler version.

Step 4 – Steam

  1. Place pathiris in a steamer lined with banana leaf.

  2. Steam for 10–12 minutes until cooked and fluffy.

Serve Thenga Pathiri warm as an evening snack, Iftar treat, or a sweet addition to Kerala festive meals.
