🥣 Pudina Moru Curry with Coconut Recipe

Ingredients:

For Curry:

  • 2 cups buttermilk (or 1 ½ cups curd whisked with ½ cup water)

  • ½ cup fresh mint leaves (pudina)

  • ½ cup grated coconut

  • 2–3 green chilies

  • ½ inch ginger piece

  • ½ tsp cumin seeds

  • ½ tsp turmeric powder

  • Salt to taste

For Tempering:

  • 2 tsp coconut oil

  • ½ tsp mustard seeds

  • ¼ tsp fenugreek seeds (uluva)

  • 2 dry red chilies

  • 1 sprig curry leaves


Preparation Method:

  1. Cook Mint & Prepare Paste:

    • Lightly sauté mint leaves in a few drops of oil (optional, to reduce raw flavor).

    • Grind grated coconut, mint leaves, green chilies, ginger, and cumin seeds into a smooth paste.

  2. Prepare the Curry:

    • Whisk buttermilk with turmeric powder and salt.

    • Add the coconut-mint paste and mix well.

    • Heat gently on low flame, stirring continuously (do not allow to boil, as curd may split).

  3. Tempering:

    • Heat coconut oil, splutter mustard seeds.

    • Add fenugreek seeds, dry red chilies, and curry leaves.

    • Pour seasoning over curry and stir gently.

Best served with steamed Kerala rice, thoran, and papadam – a cooling and wholesome lunch.
