🌶️ Ulli Chammanthi – Kerala Shallots & Chili Chutney



Kerala breakfasts are incomplete without a fiery side, and Ulli Chammanthi fits the bill perfectly. This simple yet spicy chutney combines the sweetness of shallots with the heat of red chilies to create a tangy, flavorful accompaniment. Best served with dosa, idli, or hot rice, it’s a quick recipe that packs a punch!




Ulli Chammanthi is a traditional Kerala-style chutney made from shallots (cheriya ulli), dried red chilies, and a touch of tamarind. Coarsely ground and lightly tempered, it’s spicy, aromatic, and adds a delicious kick to breakfast or meals. A must-have in every Kerala kitchen for dosa, idli, or rice.


Ingredients:

  • 10–12 small shallots (cheriya ulli)

  • 4–5 dried red chilies (adjust spice)

  • 1 small piece of tamarind (optional)

  • 1 tsp coconut oil

  • Salt to taste

  • A few curry leaves


Instructions:

  1. Heat coconut oil in a pan, sauté shallots and red chilies until golden brown.

  2. Add tamarind (if using) and sauté for another minute.

  3. Let it cool slightly, then grind coarsely in a mixer.

  4. Temper with mustard seeds and curry leaves in coconut oil (optional).

  5. Serve immediately with dosa, idli, or hot rice.

  • Perfect with dosa, idli, or appam.

  • Can be paired with plain rice for a quick meal.

  • Add a drizzle of coconut oil for extra flavor
