Ulli Chammanthi is a traditional Kerala-style chutney made from shallots (cheriya ulli), dried red chilies, and a touch of tamarind. Coarsely ground and lightly tempered, it’s spicy, aromatic, and adds a delicious kick to breakfast or meals. A must-have in every Kerala kitchen for dosa, idli, or rice.
Ingredients:

10–12 small shallots (cheriya ulli)

4–5 dried red chilies (adjust spice)

1 small piece of tamarind (optional)

1 tsp coconut oil

Salt to taste

A few curry leaves
Instructions:

Heat coconut oil in a pan, sauté shallots and red chilies until golden brown.

Add tamarind (if using) and sauté for another minute.

Let it cool slightly, then grind coarsely in a mixer.

Temper with mustard seeds and curry leaves in coconut oil (optional).
