Aval Nanachathu Recipe | How to Soak & Fluff Poha (Flattened Rice) Kerala Style

Aval Nanachathu Recipe | Soaked Flattened Rice Kerala Style

Aval Nanachathu is a simple yet essential preparation in Kerala kitchens. By soaking and fluffing flattened rice (aval/poha) properly, you get the perfect texture for dosa, puttu, and sweet or savory snacks.

🥣 Ingredients

  • 2 cups aval (poha / flattened rice) – medium or thick variety

  • Water – as needed

  • Pinch of salt (optional)

🍳 Preparation Method

  1. Rinse Aval

    • Wash the aval lightly under running water to remove dust.

    • Drain completely.

  2. Soak Aval

    • Place rinsed aval in a bowl.

    • Add just enough water to cover it.

    • Let it soak for 5–10 minutes (for medium/thick aval) or until soft.

    • For thin aval, reduce soaking time to 2–3 minutes to prevent mushiness.

  3. Fluff and Drain

    • Gently fluff the soaked aval with your fingers or a fork.

    • Drain any excess water using a sieve.

  4. Optional Seasoning

    • Add a pinch of salt if using for savory dishes like Aval Dosa or Upma.

🌟 Serving / Usage Tips

  • Use Aval Nanachathu as the base for Aval Dosa, Aval Puttu, Aval Upma, or Aval Vilayichathu.

  • Keeps well for 30–40 minutes at room temperature before cooking.
