Crispy & Authentic Falafel Recipe
Ingredients:

1 cup dried chickpeas (soaked overnight, not canned)

1 medium onion, roughly chopped

4 garlic cloves
-
½ cup fresh parsley leaves
-
½ cup fresh coriander leaves
-
2 tbsp fresh dill (optional)
-
1 tsp ground cumin
-
1 tsp ground coriander
-
½ tsp cayenne pepper (optional, for spice)
-
1 tsp salt (adjust to taste)

½ tsp baking soda
-
2–3 tbsp flour or chickpea flour (if mixture feels too wet)

Oil for frying (sunflower or vegetable oil)
Instructions:

Soak chickpeas overnight in plenty of water. Drain well before use.

In a food processor, add chickpeas, onion, garlic, parsley, coriander, dill, cumin, coriander powder, cayenne, and salt.

Pulse until you get a coarse mixture (not a paste).

Add baking soda and flour if needed. Chill mixture for 30 minutes.

Shape into small balls or patties using wet hands.

Heat oil in a deep pan. Fry falafel in batches until golden brown and crispy.

Drain on paper towels. Serve hot with pita bread, hummus, tahini, or salad.
Serving Suggestions:

Stuff into pita bread with lettuce, tomato, and tahini sauce.

Serve as a snack with mint yogurt dip.

Add into wraps, bowls, or mezze platters.
