TOMATO CURRY

TOMATO CURRY

INGREDIENTS

TOMATOES-3-4; CHOPPED
ONION-1; CHOPPED
TURMERIC POWDER- 1/4 TABLESPOON
SALT

COOK TOMATOES AND ONION WITH SALT AND WATER AND TURMERIC POWDER PREFERABLY IN AN EARTHERN POT


GRATED COCONUT- 1/2 CUP
SHALLOTS-4
GARLIC-1-2 CLOVES
CUMIN SEEDS- 1/4 TABLESPOON
CURRY LEAVES- 1 SPRIG

GRIND THESE INGREDIENTS INTO A SMOOTH PASTE

ADD IT TO TOMATOES WHEN COOKED
MIX WELL

FOR SEASONING

COCONUT OIL- 2 TABLESPOONS

MUSTARD- 1/2 TABLESPOON
SHALLOTS- 4 CHOPPED OR CRUSHED
CURRY LEAVES- 1 SPRIG
DRIED RED CHILLIES- 2

SAUTE THESE IN COCONUT OIL AND MIX WITH TOMATO CURRY
