Ingredients:
For Curry:

2 cups buttermilk (or 1 ½ cups curd whisked with ½ cup water)

½ cup fresh mint leaves (pudina)

½ cup grated coconut

2–3 green chilies
-
½ inch ginger piece
-
½ tsp cumin seeds
-
½ tsp turmeric powder
-
Salt to taste
For Tempering:

2 tsp coconut oil
-
½ tsp mustard seeds
-
¼ tsp fenugreek seeds (uluva)

2 dry red chilies
-
1 sprig curry leaves
Preparation Method:

Cook Mint & Prepare Paste:

Lightly sauté mint leaves in a few drops of oil (optional, to reduce raw flavor).

Grind grated coconut, mint leaves, green chilies, ginger, and cumin seeds into a smooth paste.

Prepare the Curry:

Whisk buttermilk with turmeric powder and salt.

Add the coconut-mint paste and mix well.

Heat gently on low flame, stirring continuously (do not allow to boil, as curd may split).

Add fenugreek seeds, dry red chilies, and curry leaves.
